Nic is the passionate founder and winemaker behind Abinett Wine, a small-batch, urban winery based on Gadigal Land (Marrickville, Sydney). Combining curiosity with hands-on creativity, Nic approaches winemaking as both craft and exploration. At Abinett Wine our mission is to craft honest, expressive wines that celebrate creativity and community. From our urban winery we champion minimal intervention winemaking with wild ferments, gentle handling, and individuality: no two vintages are ever the same.

Sourcing fruit from local regions in New South Wales and the Canberra District, Nic crafts vibrant, approachable expressions of traditional and alternative grape varieties.
